The Best Sugared Pecans Recipe



This is the best sugared pecan recipe I have found and many have asked how I make them.

Sugared Pecans

1 egg white
1 tsp cold water
1 tsp cinnamon
1 cup sugar
1 tsp salt
1 pound pecans, halved

Whisk egg whites and cold water until light and fluffy. Whisk in cinnamon, sugar and salt. Add pecans and stir to coat. Bake 250 degrees for 1 hour on parchment paper or aluminum foil. 


Don't be afraid of the salt, this is what makes the recipe so good!

Pumpkin Roll Recipe

My father-in-law asked me to make my pumpkin roll for Christmas this year. Here is a recipe that I have been using for years. I will upload a picture of the roll on Christmas Day.

Pumpkin Roll

(Makes one pumpkin roll)

3 eggs
1 cup of sugar
2/3 cup of pumpkin puree

Beat eggs until fluffy. Add sugar slowly and then pumpkin puree.

In a separate bowl, whisk together...
3/4 cup of flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt


Fold flour mixture into pumpkin mixture. Place a sheet of parchment paper in a 15 by 10 by 1 inch jelly roll sheet. Spray parchment paper with Pam. Spread mixture onto parchment paper. Bake 375 degrees for 12-15 minutes. Let cool 5 minutes. Take a clean dish towel and put cake on top. roll up from the short end and let cool.

Mix 1 8 oz. package of cream cheese, 3 tsp butter, 1 cup of powdered sugar, 1 tsp vanilla. When cake is cool, unroll from towel, spread onto top and re-roll. sprinkle with powdered sugar upon serving.

Elf Poreless Face Primer...we have been misled with packaging!!

My blog posts are usually about DIY's , crafting and baking. I just had to tell you what I came across. I purchased this Elf Poreless Face Primer at Target. The product caught my eye with the cute packaging and it was a decent price too. I finished the product and for some reason something told me to open it up and look inside. I was shocked to find out that inside the pink cylinder, there is only room for a tiny amount of product. So when you purchase this primer, it is only filled about 1/10 of the way. It looks like you are purchasing quite a bit actually not. Very disappointing.

Blueberry Buckle Muffin Cake

My husband loves Blueberry Buckle dessert and I have had this recipe for years. One year I thought, what if I just made a cake instead of putting the batter in muffin tins. This recipe makes one 8 by 8 inch cake. If you want a 9 by 13 inch cake, double this recipe. Mix ingredients and then spread in baking pan. (Fold in blueberries after you mix ingredients so they don't break apart) The batter will be a bit thick as this is a denser cake. Make the topping in a separate bowl and sprinkle on top of batter. For a 9 by 13 cake bake at 350 degrees for 40-45 minutes.




Yesterday we went blueberry picking at Grandma's Berry Patch in Wanatah, Indiana. The blueberries were huge and delicious.

Double Mailbox Post Makeover




Completed project!




My neighbor's mailbox and ours were in just terrible condition. The mailboxes had a wooden cover where the birds loved to perch and poop all over them. I asked my neighbor if he would be interested in sharing a double mailbox post with identical mailboxes and he agreed. Little did I know that none of the major home improvement stores sell a double mailbox post, unless you want to special order one for hundreds of dollars or have one custom made.  This project cost about $100, split between the two of us...$50 each, not too bad!

Materials needed...
Wooden post from Lowes-ours is not listed online but very similar to this one
1- 1 by 6 piece of wood  approx. $5
screws



We installed the post and then put about a 26 inch cross piece to set the mailboxes on. The size of that piece of wood will depend on the size of your mailboxes and how close you want them together. If you have any questions on how we installed it, comment below.

How to get rid of those pesky Stink Bugs

Easy Way to capture those pesky Stink Bugs

Take an empty 2 liter bottle of soda and cut it right below the shoulder.



Get a small LED light and put it inside the bottle, the turn the top upside down into the other half; tape around the edge. The bugs are attracted to the light and will go in, but they CANNOT get out!

Hot Tub Privacy Issue

We have a hot tub which was in plain view for everyone to see. I felt so exposed everytime I went into it. After looking at many pictures on pinterest, I finally came up with this simple plan and it was very easy to make. All you need are 2, 8 ft, 4 by 4's; 1 wooden trellis sheet 4 by 8 feet, and 2 decorative fence caps. I'm in the process of painting it now. Eventually I will have a flowering vine growing on it.

The Best Lemon Bar Recipe!

The best Lemon bars ever!

My mom made the best Lemon bars when we were kids. She gave me this recipe years ago. The recipe card you see is about 25 years old, in my handwriting, and it's got all sorts of stains on it! You know it is a good recipe!

It doesn't say on the recipe card, but for the crust, I recently found out that if you soften or melt the oleo (butter), in the microwave, it is much easier to mix. Press into pan, up the sides a little and bake for 20 minutes until lightly browned. Mix the topping ingredients in the same bowl as you mixed the crust. After crust is baked, immediately pour topping onto the crust and bake another 20 minutes. Sprinkle with powdered sugar.

I usually double the recipe for a 13 by 9 inch pan. Hope you enjoy them as much as my family does!
I use butter. What is oleo?! Lol

Terro Ant Killer vs. Raid Ant Gel, Terro wins!!

Video of ants loving Terro. They swarm around the small puddle of Terro and then take it back to their nest. They will be gone within one day. Do not disturb them!


Every spring since I have lived in my house, we get an ant problem. I have tried many different ant killers. Last time I went to the store, I couldn't find my favorite ant killer Terro, so I purchased the Raid Ant Gel.  It didn't seem to work.  I found the Terro and purchased it. Yesterday I had ants crawling on my counter (gross I know!) So I decided to do an "ant killing test." On a piece of foil I squeezed out some of the Raid ant gel on one side and Terro on the other. As you can see from the picture, there is one ant on the Raid gel and many on the Terro side. Today, I have no more ants. Terro wins again. 

Last year my in-laws had a terrible ant problem in their kitchen, to the point where my mother-in-law stopped baking. My father in law purchased ant traps, sprayed, nothing worked. I told him about Terro. He did what I said to do and in a few days they were gone! 

This is what I do when I notice the ants coming. I take a piece of aluminum foil, a 2 by 2 inch piece and squirt out a dime size blob of the Terro Ant Killer on it. I place it where the ants are. Within minutes, the ants are gathering around the blob. Do not disturb them! They are taking the "killer" back to their nest. It will take a few hours. Yesterday, I placed the ant killer down and this morning they are gone. Terro also makes traps where you cut off a bit of an end and the ants crawl in. I've used these as well with great success. As always, if you have young children or pets, please be careful so they don't come in contact with the ant killer,  put it in a discreet place.

Update 10/10/16. I have another ant problem, I put out some terrro this morning and this afternoon it is swarming with ants.

9:00 am ...I have ants in the upstairs bathroom, I placed a dime sized amount on a piece of foil. 2 hour later, it's filled with ants. 10:00 pm...no more ants!

Chocolate Italian Love Cake

I don't think I have a bit of Italian in me but when I saw this recipe, I knew I had to make it! It turned out really good. I think I would mix 8 oz of cream cheese and 8 oz. Ricotta next time, but it still was delicious.

Outdoor grass paver project

The ground at the base of my deck stairs is just horrible! Grass won't grow and this winter it was a muddy mess. I purchased some pavers to make a landing.

This was a hard project. We should have hired a landscaper but were trying to do it cheap. It's ok, and will solve my problem for now.

French Press Coffee...the best coffee at home!


My Keurig coffee filter got a hole in it and I looked to buy another at several different stores but they don't carry it anymore. I have another style of filter, but my coffee grounds may be just too fine as the water won't flow through it. I was at Home Goods yesterday and saw a single serve French press for $7.99. I've heard alot about them on Pinterest, so I bought it. It didn't come with instructions so I watched a few videos on YouTube to figure it out.

Directions:

What I learned about making a good cup of coffee is that you use 2 tablespoons of coffee per 8 oz water. Take off french press lid/plunger and pour coffee grounds inside. 
Add 8 oz of hot water, about 200 degrees. Let sit for 4 minutes. Slowly press down plunger until you can push any further. Your coffee is ready! It is the most delicious coffee ever. I'm hooked!

Peanut Butter Chewies

When I worked at the IU bookstore in the student union, there was a bakery inside called "Sugar and Spice." They had the most delicious treat...a chewie, a peanut buttery crunchy snack. Kind of like a rice krispie treat but with peanut butter and cereal...to die for. I will have to try this recipe to see if it matches up.                         Peanut Butter Crunchy

Update: 3/25/15
I went down to the IU campus a couple of days ago and had a chewie. They tasted just the same as they did 25 years ago! I made this recipe and it is almost the same. Heavenly.

Candied Cherry Cookies

This was my Valentine dessert this year, Candied Cherry Cookies. I've heard them called Swedish cookies as well. My kids really liked them. They are a crisp cookie, not too sweet. Thank you Coast Inn Bed and Breakfast for this recipe. ( I used one 6 oz. container of candied cherries and diced them in smaller pieces, rather than in half like the recipe says.)


Candied Cherry Slices

Description:
Great Christmas cookie, this freezes well and is always a big hit.

Ingredients:
1 cup butter
1 cup powdered sugar
1 unbeaten egg
1 tsp vanilla
2 1/4 cups flour
1 cup chopped nuts
2 cups green or red candied cherries cut in half

Directions:
Cream butter and sugar, blend in egg and vanilla. Add flour and mix well. Fold in nuts and candied cherries. Divide dough into 3 romms, wrap in waxed paper or plastic wrap. Chill 3 hr. or overnight. Cut rolls into 1/4 slices. Bake at 325 for 13-15 minutes. These freeze well.
